Isolation is structural, not cosmetic: every record carries a tenant identifier and every query filters on it.
Green lots, roast batches, blends, cuppings, and standing orders are first-class objects, not custom fields on a generic record.
Pilot records locally when a site drops and reconciles on reconnect. It says it is offline rather than logging something wrong.
A full tenant export as an archive in open formats, at any time, plus the public API for anything continuous.
Artisan and Cropster roast data import directly, alongside bulk CSV and JSON for lots, suppliers, products, customers, and price lists. A decade of roasting does not get left behind because the format changed.

Imported totals are checked against your own, green on hand against roasted stock against outstanding orders against receivables, until the two agree. Nobody logs in to a number they do not recognise.
